Grill Pan Ahi Tuna Photos
This is made from frozen Ahi Tuna from Albertson Market. Defrost a day ahead of time. Let filets sit on the counter to reach room temp or close to it. Mix equal amounts of olive oil and frozen OJ to brush on filets.
Apply the Blacken Cajun season. Be Generous! Turn on vent fan. Use a hot grill pan 400 degrees. Grill first side one to two minutes, check for the color change. Turn over, insert temp probe and stick pan and fish in the preheated oven. The pictures show taking the tuna out when the temp reaches 115. You will notice in the 5 minutes it sat in the pan the temp went up 20 degrees. 135 is very well done. I would normally take the fish out of the pan and let it rest on a plate at 115 degrees or take it out of the oven at 95 and sit in the pan to rest. You can also just sear the filets only in the pan and serve. Leaving the tuna raw/rare. Done right this will remind you of eating steak.
